Ingredients:
Gongura Leaves
Dry Red Chillis
Green Chillis
Garlic Pods
Jeera
Methi
Tamarind
Daniya
Salt
Turmeric
Oil
Tempering Seeds
Recipe In English:
Firstly, wash gongura leaves and let them dry.
In a pan, add oil heat it and add jeera, methi, dry red chillis, green chillis and saute well. Take them on a pan separately.
Now in the same pan add a little more oil, add gongura leaves and salute them well. You will notice that, as the leaves cook, they shrink and become very less in quantity. Also add garlic pods and let them cook well. The fragrance says that the leaves along with garlic pods have cooked well.
Now add the required salt and turmeric and saute well. Now add a little tamarind and saute again. (Though we know that the gongura leaves are sour, we add tamarind since the sourness will not be sufficient while having with rice)
Add the gongura mixture and the clilli mixer – Grind them coarsely.
Lastly garnish with tempering seeds.
Tasty gongura pachadi is ready to be served.
