Cranberry Cake



Ingredients :

Fresh Cranberry : 200 gms

All purpose flour : 350 gms

Sugar  : 200 gms

Yoghurt : 150 gms

Baking powder  : 1 tsp

Baking soda : 1/2 tsp

Cinnamon powder : 1/4 tsp

Finely grated Almonds and Walnuts : 1/4 cup

Oil : 3 tbsp

Butter : 3 tbsp



First wash the cranberries and keep them aside. Heat a saucepan and add the cranberries to it, also little water and 1/2 cup sugar. On high flame,  keep stirring continuously for 4 to 6 mins , until they burst and leave the juice. Sift flour, baking powder, baking soda, cinnamon powder. In a bowl, take the yoghurt and mix with water to make buttermilk. Take another bowl add oil, sugar, butter and mix well.

Now mix well both dry and liquid ingredients along with cranberries and nuts. Now put the mixture in a baking mold and bake in pre-heated oven for 30 to 45 mins at 180 degrees centigrade or until when the inserted toothpick comes clean. Once the cake it done it it cool down and then invert it and serve it.
