Energy Bars For an Active Day
As we learn about more and more nutritious yummy treats, here is one more for the kick. Each serving comes power packed with almost 200 calories, 4 grams of protein, 27 grams of carbs, and 10 grams of good fat from the Omega 3 ingredients, these Energy bars save the day !
To make 12-13 bars, we need:
* 1 cup - chopped almonds
* 2 cups - old fashioned oats
* 1/4 cup - dried fruit ( cranberries, dates, apricots, prunes)
* 1/4 cup - chia seeds
* 1 tsp - vanilla essence
* 1/4 cup - semi-sweet dark chocolate chips
* 1/2 tsp - kosher salt or sea salt
* 1/4 cup - melted coconut oil
* 1/2 cup - honey or agave nectar
* 1/2 cup - unsweetened dry shredded coconut
Directions to Make:
Combine ½ cup almonds, homey, melted coconut oil, salt, vanila essence in a blender and run until smooth.In another bowl, combine oats, shredded coconut, 1/2 cup chopped almonds, dried fruits and chia seeds and mix. Now stir the blended mixture into these dry ingredients. Spread this final mixture onto a wide greased plate or baking sheet, evenly.
Melt dark chocolate chips in a pan, over low heat and Drizzle it generously over the spread over mixture. You can even sprinkle coconut flakes and finely chopped almond pieces. When the spread is half dry, make grooves for bars with knife.Let everything dry overnight and next day, break them into bars and store until they are gone forever !!!!
