Couscous ( Kus Kus) And Veggie Stew
Now what we are discussing today is an interesting recipe for all health-loving people, so thats for you too ! Couscous ( Kus Kus) is the present day healthy ingredient. Made of 100% wheat, couscous belongs to the pasta family and tastes like semolina. Indians might compare its looks with Cracked wheat too. It is a staple in Israel, Mediterrania, Morocco etc.Couscous sold in most Western markets are pre - soaked and instant.
We need:
* 1/2 cup - couscous
* 2 cups - water
*1 cup - zucchini squash
* 1/2 cup - finely diced ripe tomatoes
*1/2 Tsp - Italian Herbs * Required - Salt
* 5-6 Finely Minced - Garlic
* Red peppers - for required heat
* Olive oil or any light oil - for cooking
* 1/3 cup - finely chopped onions ( if you like)
* Chopped cilanthro or Parsley for garnish
Cooking procedure:
Heat oil in a pan and crackle the minced garlic. Add onions, once they turn transparent, add tomatoes, some salt to taste and cook with the lid on. Once tomatoes are cooked and juicy, add Zuchhini and watch until they are half cooked ( Zuchhini cooks so fast, with very less heat), add Couscous and pour 1.5 cups water and cook with the lid on. couscous softens quickly and takes so much water even after its cooked...
Based on the heat and the vessel you are using, pour water until it does not get absorbed anymore, inorder to eat this dish as soupy stew. Sprinkle Italian herbs, red pepper, and mix well. Garnish with Cilanthro or Parsley. Serve in a soup dish when hot enough, it cools down so quickly. Try Couscous with the stew of your discovery, it will not turn you down !!
