Cauliflower Paratha
Cauliflower is a seasonal vegetable, even though now its available whole year the right and tasty ones come in winter season. So when its winter try to use it as much as possible. Lets see how we can make a tasty Paratha out of it.
For Dough :
Take 2 cups of wheat flour,1 tsp of ajwain and a little salt. Mix them well and make a smooth dough adding equal quantities of water and milk.If you think 1 cup water is needed then use 1/2 cup water and 1/2 cup milk.This makes the dough smoother and tastier. Keep the dough aside covering it with a damp cloth.
Ingredients for filling :
* Cauliflower- 1 small grated( Desi one not hybrid )
* Sweet potato - 1 big ( boiled)
* Oil- 2 Tspn
* Zeera -1 sp
* Coriander powder - 1Tspn
* Garam masala - 1spn
* Ginger garlic paste - 1Tspn
* Onion - 1 Big (finely chopped)
Method:
* Take a kadai /Pan,put 2 spoons oil in it.
* As the oil heats add Zeera. When zeera splutters add onion and fry till transparent.
* Then add grated cauliflower,cooked and mashed sweet potato,and other dry masalas. Keep it on fire for 2 mins and leave it to cool down.
*Once the filling mixture cools down take small portions and make a small ball Roll in a small chapathi,place this filling in between and carefully close it, Roll into a paratha again.
* Put a pan and cook this patatha on medium flame to get the golden brown color. Serve it hot with any form of Dahi chutney.
* Try not to add much of butter to parathas , instead add desi ghee,its much healthier. Happy n healthy eating....!!!
