Brinjal Delight
Ingredients:
Brinjals 1/2 kilo (washed and halved,keeping the stem intact)
Onions 2 nos( sliced)
Garlic 5 nos (sliced)
Ginger 1 teaspoon ( pasted)
Tomatoes 1 no (sliced)
Jeera 1/2 teaspoon
Bayleaf 2 nos
Mustard oil 3 tablespoons
Turmeric powder 1/2 teaspoon
kashmiri chilli powder 1/2 teaspoon
sugar 1/2 teaspoon
salt to taste
coriander leaves for garnishing
Method
Heat the oil and lightly fry the halved brinjal and keep aside.
To the remaining oil add a pinch of sugar and the jeera.
Then add the sliced onions and the garlic.
When they turn golden add the ginger paste and tomato and cook for some more time.Then add the turmeric, chilli powder salt and sugarand add a liitle water.
Cook forsometime.Then addthe bayleaf and the brinjals.
Add a little more water if required.Cook till oil separates. Remove from fire.
Garnish with coriander leaves.
Stuffed Brinjal (Eggplant) Curry
Ingredients:
Small purple brinjals - 1/2 Kg
Finely chopped onions - 1 cup
Sambar powder - 1 tsp
Garam masala- 1 tsp
Salt - to taste
Jaggery powder - 1 tbsp optional
Oil - 2-3 tbsp
Method
Wash brinjals, cut away the stalk. Slit each brinjal into 4, keeping them joint at the other end. Combine onion, aamti masala, salt, jaggery and 1 tbsp of oil together.
Stuff the brinjals with the masala mixture. Arrange them in a flat microwave safe dish, bigger ones on the outer side and smaller ones in centre.
Pour the remaining oil over them. Cover and cook full power for 8-10 minutes. Stir and cook uncovered for 5-7 minutes stirring once after 3-4 minutes.
