Whole Grain Banana Rolls for Breakfast

Breakfast for kids is a challenge and making breakfast interesting for school-goers, is toughfor Parents. As breakfast is the most essential meal of the day, no one should skip it, starting with a new born. Preschoolers who just started their school life, are suddenly in a morning-rush environment... And in this situation, getting them to finish breakfast...dont tell me...! So worrisome, if they dont eat well.

Here is one good recipe for those busy mornings and those little guys:

Whole Grain Roll Ups with Banana and Peanut Butter

We need:

* Whole wheat or Multigrain flour chapatis ( Tortillas)

* Peanuts ( Roasted)

*  Mixer/Blender

*  1Banana

* Dates/black raisins/ cranberries

To make home-made Peanut Butter:

for 2 cups of Roasted Peanuts, you can make just a cup of Peanut Butter. After roasting the peanuts well, if you dont like the skin, shell it. When you are ready to grind the peanuts, in a blender, grind them to smoothness until you see oily peanut butter. Make sure there is no water on any spoons or containers you use to store it. The same procedure is good for Almond Butter. You just need to soak almonds, remove the skin and wipe off the moisture before grinding. This home-made option is to avoid High Fructose corn syrup or Sugars and preservatives the store bought Peanut Butters usually carry.

Making Rolls:

Take one Chapati, spread the peanut butter liberally on it. Place a peeled Banana at the center and roll the Chapati. Cut it into small rolls and apply peanut butter over each roll or garnish with sweetened cranberries or black raisins or chopped dates.

This breakfast option will serve your child sufficient amount of Fibre, Protein, Iron, potassium, Anti-oxidants and other vital nutrients as a kick start for the busy day at school.
