" coconut ash gourd" salad
 

In the series of salads, today we are presenting “Coconut -Ash gourd” salad. This is very rich in vitamins and minerals. This dish can be made as part of your daily diet.

Ingredients:

* Ash gourd - 500 grms
* Grated coconut - 1/2 cup
*Sprouts - 1 cup
*Ginger - 1 inch
*Lime juice -1 tablespoon
*Cumin powder - 2teaspoons
*Chopped coriander - 1 tablespoons
*Salt to taste.

Method:

* Take out the skin of ash gourd and seeds and store this separately as you can make chutney out of this later.

* Now cut the white portion and grate it finely.

* Cut ginger in to very small pieces.

* Put this chopped ash gourd in to a big glass bowl and add all the above said ingredients except coriander. Now add ginger pieces and mix well.

* allow the mixture to settle.

* Finally add coriander and serve.
