Simple Every Day Roti low fat curry

 

 

 

Ingredients :
* Potatoes 1/4kg
* Carrot 1/4kg
* Peas 1Cup(Frozen, Fresh ,and if  Dried soak overnight)
* Ginger ½ inch
* Green Chilies 2/3
* Pinch of asafetida
* Curd ¼ Cup(Optional)

 

Method:
1)Rinse the vegetables in water. peel and then chop potatoes, carrots. also chop the ginger and green chilli. chop the potatoes and carrots into small pieces or you can even chop them into cubes.
2)Heat oil in a pressure cooker. after 1-2 minutes, add cumin and sauté till cumin starts spluttering.
3)Add the chopped ginger and green chillies in pressure cooker.
4)Add all the vegetables – potatoes, peas and carrots and then add asafetida add salt and 2 to 3 tbsp water. close the pressure cooker and cook for 2 to 3 whistles till the vegetables become tender. sauté for 2 to 3 minutes.
5) Just 2 mins before switching off the flame add well beaten curd. And off the stove. This will the gravy touch. If you want dry curry don’t add curd.
6)Serve Potato carrot peas simple curry with roti or Phulka.
As an accompaniment give curd sprinkled with salt pepper, peanut powder coriander finely chopped.
