Beetroot Pancakes for Breakfast

 

 

 

Food coloring can make any food interesting to the eye, specially for children. Let us try one such idea to make a healthy treat. For a change, we are not using the artificial food colors, but the real veggies to serve a delightful breakfast.

 

 

Ingredients:

To make 4 medium size Beetroot Pancakes, we need the below ingredients:

* 2 medium size beetroots ( pressure cooked in a separate vessel with lid and pureed)

* 1 tbsp baking powder

* 1/2 tsp sea salt or kosher salt

* 4 tbsp brown sugar
* 1 large egg

* 1 and 3/4 cup whole wheat flour

* 1 and 1/4 cup low fat milk for making the batter

* 1/2 tsp vanilla extract for flavor

* 3 tbsp Olive oil or coconut oil for greasing

 

Making:

Mix the pureed beetroots, milk, egg and vanilla extract in a bowl and gently stir to mix well. In a separate bowl, sift the flour, salt and soda. Add the dry ingredients to the wet mixture. Donot over beat the batter. Heat a griddle and grease it with coconut oil or olive oil. Spread pancakes in desired shapes for the kids...serve them with original maple syrup or honey. These pancakes have brown sugar in them, so you can skip the dressings if possible. DONOT let your children know that you are going to serve them Beetroot pancakes....tell them these are Red Velvet pancakes..as they might identify the cake name..or give it some Dark Pink pancake or some catchy name if Boys around....make sure to reveal the real name, Beetroot Pancakes, after they finish eating. They have to know that veggies are interesting and tasty to eat !!!
