Raisins And Oats Cake
Ingredients:
* 2 - eggs
* 2cups - all purpose flour
* 2 teaspoons - baking powder
* 1 teaspoon - baking soda
* 2 cups - oats
* 2 cups - raisins
* 2 cups - buttermilk
* 1 cup - packed brown sugar
* 2 spoons - cooking oil
* 1 teaspoon - ground cinnamon
* 1/2 teaspoon - salt
* 1 cup - chopped walnuts, optional
Preparation:
In a large bowl, beat the eggs, buttermilk, brown sugar and oil. Combine the flour, baking powder, baking soda, cinnamon and salt; gradually add all the above said ingredients to prepare the batter and blend very well. Now, add the oats, raisins and walnuts if desired and mix well with a wooden spoon.
Transfer the batter in to a greased and floured cake pan. Bake at 375° for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool again for 15 minutes and remove from pan to a tray to cool completely. You can top it with nuts of your choice before serve.
