Healthy Beetroot and Apple soup
Ingredients:
Apple juice - 200 ml
Beetroots - 2 large - peeled and chopped
Potato - 1 medium- peeled and chopped
Ginger - 1 inch - finely chopped
Onion - 1 finely chopped
Garlic - 2 cloves - finely chopped
Cinnamon powder - 1 tsp
Cumin powder - 1 tsp
Crushed black pepper - 1 1/2 tsp
Sugar - 1 tsp
Oil - 2 tbsp
Coriander - 2 tsp finely chopped
Water - 2 cups
Salt to taste
Method :
Heat oil in a pan and add garlic and ginger and sauté till it is cooked for about a minute. Add chopped onions and sauté couple of minutes. Add in chopped beetroot and potatoes, black pepper, cumin powder, cinnamon powder and stir them. Add in water and cook covered till the vegetables are soft. Cool and strain the liquid. Retain the liquid. In a mixer, blend the cooked vegetables till it becomes smooth. Add in the strained liquid and the apple juice.
You could also add water to it if the mixture seems to be too thick. Stir well, add salt and sugar to taste and heat again on low flame for about 5 minutes, till bubbles start appearing on the surface of the liquid. Now remove from heat, take the soup in a bowl, garnish it with coriander and serve it hot.
