Methi Mutter Rice

 

 

ingredients:

1Cup -Cooked rice
1/2 Cup -peas ,(fresh or frozen)
2 Small Carrots- (finely chopped)
1Big onions -(Finely chopped)
1 lemon
2 tspn oil
5/6 kaju
Pinch of turmeric
Pinch of hing(optional)
1/2 spn dhania powder
Salt to taste

Coconut Paste :2 green chilli ,1 inch ginger,1/4 spn zeera,2 small pieces coconut paste
 


Method:

Put oil in a heavy bottom pan. Fry Kaju,fry for few mins(Kaju burns fast so be careful). Put onions and fry a little. Then add finely chopped carrot fry till half cooked,add green peas.Add turmeric. If interested add a pinch of hing. Then add coarsely ground coconut paste. Fry a little bit. Take methi leaves clean them and add to pan. Fry a bit and add salt and dhania powder. (If you want it more spicy add a little chilli powder )Dont fry too much after adding Methi leaves. Put half of lemon juice.Add a little bit of ghee or oil to get rich texture. Your colorful and healthy lunch box recipe is ready.
