Healthy Burritos for Breakfast

 

 

Most of us have leftover Chapathis from the previous night or some wheat dough ready to use the next day...why eat those chapathis with the same old curry or a boring jam or sauce? Lets think out of the box and follow the Mexican way...making burritos for breakfast will be interesting and filling too. You have to remember to soak a few Black beans or any other beans, the previous night for this recipe or use the canned beans.

 

We need: for 2-3 Medium size Burritos
 

*Sufficient amount of dough or required no.of chapathis

*1 Green or Red Bell Pepper ( capsicum), diced

*1/2 big red onion, diced

*Few green chillies or Red chilli flakes

*1 cup Black beans, cooked with slight salt

*2-3 eggs or equivalent egg whites

*Coriander ( Cilanthro) leaves, chopped

*Black Olives

*Generous amount of Mozzarella or any cheese you like

*Salt

*Oil for seasoning

 

Heat a pan and a teasppon of oil. Dice in some red onion pieces and saute until translucent. Now add the capsicum pieces, green chilli pieces if you like and saute. Once the capsicum is semi-cooked until not-so-raw, crack the eggs or add the egg whites and let the eggs cook well. Sprinkle some salt (and red chilli flakes if you are using), garnish with chopped coriander leaves and chopped black olives. Sprinkle a generous amount of shredded cheese or add just the quantity of it.

 

On a separate tawa, reheat the chapathis and place the veggie-egg mixture on them and roll-up. You can actually add as many other veggies as you like, such as some Avocado cubes too for a creamy taste and dressup with some sour cream. Some like to bring in their fav. meats to replace the eggs. These burritos have protein for a kick start and the necessary carbs and good fat too, plus the feeling of 'did something new with the boring leftover dry chapathis' feeling. Try and you will not have regrets about this healthy burrito breakfast !
