Eggless Coconut Cake




All purpose flour       - 1 1/2 cup

Coconut milk             - 1 cup

Condensed milk        - 3 tbsp

Boiled milk                 - 1 cup

Sugar                         - 1 cup 

Vanilla extract            - 1 tsp

Baking powder           - 1 tsp

Baking soda               - 1/2 tsp

Oil                               - 1/2 cup


Method :

First soak coconut powder in milk which is at room temperature for about 25 - 30 mins. Pre heat the oven at 180 degrees centigrade. Grease a baking pan and dust it with flour. Sift flour, baking powder, salt, baking soda twice just to make sure there are no lumps formed. Add sugar, vanilla extract, oil and condensed milk in a bowl. Now add flour in this mixture and fold it gently. Add soaked coconut too. Now add this mixture to the baking pan and bake it for 45 to 50 mins or until the toothpick comes clean when inserted. Once it completely cools down, cut it into slices and serve.
