Beetroot Rice





Beetroot - 1 finely grated

Garam Masala - 1/2 tbsp

Red Chilli Powder - 1/2 tbsp

Cumin/ Jeera - 1 tbsp

Hing - 1/2 tbsp

Bay Leaves - 2

Red Chillies - 2

Green Chilli - 1 finely chopped

Black Pepper - 4-5

Curry Leaves - 4-5

Ghee - 1 tbsp

Salt as per taste



First wash and soak rice for at least half an hour. Now cook rice in an open saucepan. Once done, drain excess water and allow the rice to cool by spreading in a plate. Heat ghee in a pan and once hot, add tadka of hing, jeera, curry leaves, bay leaves, black pepper and dry red chillies. Add chopped green chillies and saute. Add grated beetroot, saute and cook till they become soft. Add salt, red chilli powder and garam masala to the rice. Add the cooked and cooled rice and mix well. Cover and heat it on low flame for a couple of minutes. The hot and healthy beetroot rice is ready. Serve it with raita.
